Bunnies and Chocolate Fudge Delights


Wow. Our second Easter together. Time is flying by so quickly or so it seems. Last year at this time I made us a dinner including roast, potatoes, carrots, bread, peas, green beans, salad, and cake for dessert. This year, it is ham, chicken, gravy, veggie tray, rolls, mashed potatoes, Brussels sprouts, deviled eggs, and topped off with a lovely sugar free yellow cake with chocolate fudge frosting. Yes, the frosting is sugar free as well. Pillsbury makes an incredible yellow and chocolate cake mix and a decadent chocolate fudge frosting or a white frosting that are also sugar free. 


Since I am still wheelchair bound, I chose most items pre-made to make the meal easier to prepare. I heated up the pre-cooked ham and the already broiled whole chicken. Mashed potatoes are now pre-packaged and taste awesome. You can't tell the difference between the Bob Evans or whatever other brand of mashed spuds or the potatoes you make from scratch. 

What are those potatoes without being smothered in pork flavored gravy? Nothing. So gravy it is. I cooked up the Brussels sprouts, covered them in butter, sprinkled on salt and pepper, and then served those alongside the meats and potatoes. I took some veggies from the tray that we got at the store to add a variety of cooked and raw veggies of different types. 





I used to decorate cakes and have fun with them for every occasion. Today I baked a simple one layer, rectangular pan cake and smeared some chocolate fudge frosting on top. Nothing to look at. Nothing to see. But oh, my! That chocolate fudge frosting and the spongy, light, fluffy yellow cake mix was worth it anyway. 

Throwing the cake in right after completing the deviled eggs, those two dishes were complete by about noon. The rest of the dinner was heated and baked quickly at about 4:00, so dinner was eaten by 4:15. 

Terry and I watched The Good Nurse while eating. The Good Nurse is playing on Netflix, so we figured we would try it out. Terry picked it out while I was finishing preparation for dinner. 

The movie was pretty good. Another murder mystery, which are usually good at keeping you at the edge of your seat. At least any worth their weight in film is known for that. This was a film you knew about halfway through who did it, but the intense part was getting the suspect to admit to it as they had no other evidence. I will leave that here so I don't ruin it by giving out spoilers. 


After dinner, it meant assuming the position and watching The Good Nurse for a couple of hours. Good food. Awesome company. Lovely time. Blessings flowed today! We have our home that is comfortable, cozy, and shared with our fur babies. The food we ate today is such a blessing, as many do not have that luxury. We have each other and that is most important.
